Tokyo’s newest three-star chef wants ‘harmony across every detail’

Daniel Calvert has reached new heights.

The executive chef of Sezanne, the innovative French fine dining sanctuary located inside Four Seasons Hotel Tokyo at Marunouchi, was awarded a third Michelin star last month, a remarkable achievement in any event — but even more so since Sezanne opened just over three years ago.

“With the third star, there’s a sense of validation,” Calvert, the first British chef based overseas to receive Michelin’s highest honor, tells The Japan Times, “and guests now arrive more open-minded, perhaps even curious, about what defines ‘French’ at Sezanne.”
